you can already change text strings as they are coded as gettext strings. This snippet: https://bitbucket.org/snippets/vanweerd/6kjLK/revisions/00fd633532277b359a497c1ae3fba454a866d3e5 is an example of code you can add to your functions.php file to change (“translate”) text.

Thanks Ron – But can I also change the “price” as well — For example, I’ve changed “default” to “Sort Products (default)” and capitalized “Price” and “Name”

I am not sure what you mean by ‘can I also change the “price” as well’. What exactly are you referring to?
