Could you test this product with Twenty Twelve theme active https://www.contenitoritermici.it/shop/portavivande-termici-mediterraneo/contenitore-termico-mediterraneo/

If that works, your theme may be including an outdated version of:

templates/single-product/add-to-cart/variable.php

You can either wait for the author to update in that case, or remove that file from the theme to revert to the core version.

+1 Mike, I did the same and the variations are working now, Looks like I need to wait for the theme author release the new update with this file
