Advice: Custom Taxonomy or Custom Field?

I am building a custom theme for a real estate website. I have created a Custom Post Type (‘Properties’) and now I am am about the create the various fields required, e.g. property type, number of bedrooms/bathrooms etc.

I would like to create a detailed custom search box later on (search by Price, Bedrooms, etc.) and was wondering what’s the best method to create the various fields – Custom Taxonomies, or Custom Fields? Basically, which method, if any, is better than the other in terms of the ability to search the data afterwards?
