administrator overrides (time, party, email, tel)

have i misunderstood administrator overrides? i thought it meant administrator can select any time, but as it seems impossible to enter a time other than those in the set schedule i guess what it really means is administrator can override the late and early bookings only.
our restaurant opens 6pm to midnight x 7 days, but takes wedding parties and other group bookings outside of these times, say 2pm. how can i input these?
(also email and phone, though we want it as required in front end bookings, would ideally not want it as required in back end. however hard we try there will be some walk in and referred bookings where we won’t have one or other or both. as it stand’s i’m having to make up fictitious emails and tel numbers just to get booking accepted – this is a bore but not a biggie)
as you have kindly already attended to admin override on the size of party, would it be possible to apply an overall administrator all field verification is off?
I am currently inputting 150 existing bookings manually before going live, so i can extend hours to deal with the existing bookings, then restrict them again before going public, hope the time issue is resolvable.
