You can set up the “From name” from plugin settings. Please refer to the below doc.

If you have enabled the WooCommerce email style option for the email templates then the sender name and sender email address will be replaced by the Woocommerce Email sender options. i.e WooCommerce > Settings > Emails > Email Sender Options.
