Lately on my site (https://www.zeroxr.com/), I have been noticing that some of my posts do not note me as being the author. I will be logged in my account which is an admin one for my site and it will say that the post author is one of my editors on occasion or it will be me.

A great example is on the 2 new posts…

On the “Write Post” page, the “Post Author” section only has the choices between my two editors and not me.

How would I resolve this so I can denote that when I am on my admin account that I am the author? Any help would be appreciated.

The only plausible solution so far that I have found is to make another sub-user, but that would involve going back and reassigning my 200+ posts to me. Is there possibly another solution that would have me not doing doing that and just correcting 4-8 posts to me being the authors?

Seen this problem in one of my installations. The only difference in a non-working version compared to others working with no problems are two plugins: Role Manager and Freshpost.
Maybe this can help you a bit to pinpoint the problem.
