Adding Variables In The Subject Field? Changing From Address?

Can somebody please help?

I’m trying to figure out how to add variables from the form in to the subject line, so it provides more information about the Email in the subject.

Can it be done like this?

(Subject) Re: [menu-701] [text-227] [text-981]

We have 10 people getting the Emails so need to figure out what the Email’s about so that way 10 people don’t have to open it.

Also I am trying to figure out how to change the ‘from’ on the Email as it sending from “WordPress” right now. How do I change that?

Would really appreciate the heads up.
