Adding post to page of choice

Hi all,

This theme really took all my attention due to it nice looks and gallery post format option that takes the attention of visitors of the website.

I would like to have the possibility to add posts to a page (home page), without having the new posts to appear first. This way I can decide which posts appear at the home page.
New posts can be accessed based on the category to be filtered via the side bar.

I have been looking for plugins that would made this possible, but did not found anything that remains close to the layout of this Theme.

Any help would be much appreciated.
