Adding letters to the alphabet

I’m not related with this particular plugin in any way (I don’t even use WooCommerce yet). I just “stumbled upon” your post.
But what you’re asking probably needs to be resolved on the database table. The sort order is governed by the combination of character set and collation in the tables and columns of your database. Ref: https://mariadb.com/kb/en/character-sets/

Note that these settings for the database just function as “default values” when a new table is created, so it’s not totally trivial. Google for more detailed descriptions, but before you touch anything, make sure to save a backup of your database.

The alphabet and sort order use is managed by the WordPress database and would depend on your database’s collation. You can read more about unicode character sets and their effect on sort order here: https://dev.mysql.com/doc/refman/8.0/en/charset-unicode-sets.html.
