Adding Different Product Categories

So far, I am loving this plugin. I would like to know how do I create different product categories where I would create a specific product and add it to a specific category. How would I do this?

Also, I’m not quite understanding the “Product Type” feature. The “On Sale” states: “These products may be highlighted as on sale”, but when this option is selected, the products don’t stand out from the others. Am I missing something?
