To link it to your shop page, you can change this function:

function jk_home_link() {
	echo '<a href="' . esc_url( home_url( '/' ) ) . '">' . __( 'Home' ) . '</a>';
}

to this:

function jk_home_link() {
	echo '<a href="https://yourwebsite.com/shop">' . __( 'Shop' ) . '</a>';
}

Of course, you’ll want to update https://yourwebsite.com/shop to the address of your store page ??
