Adding custom field to Orders in the cms and send to customers

Hi,
I want to add a text field to enter tracking number for each new order in the dashboard, so that once an order has been processed and packed that tracking number can be emailed to the customer. Is there any plugins or code to handle this? The following needs to be included:

1. add a custom field for each order in the admin side.
2. include the field data to notification email when the order is marked as completed.
