Yes, if you are familiar with WordPress development and you are using the radio/button selection layout you can use the following filter:
'wcdp_label_' . $input_value

Last question regarding this.. is it possible for the labels to be different per product id? Right now when I change the labels, it changes for all products. But I’m wondering if it’s possible to have custom text per product ID.

No, sorry, the current product ID is not passed to this function.
