Add custom action for expired carts

Hello,
1- I need to change the role for users whose carts had expired and don’t pay for cart items.
I know it’s not available but I need to do this
can u please tell me where can I find the function that restocks items and clear cart in your plugin to customize it or just tell me how to do what I need

2- Can I make a different expiration time per user role?

3- For some reason, the received items are bigger than the real stock, and this makes an issue for stock and your plugin functionality
