Add content to a category page

I’d like to have a consistent blog post style on the home page, blog page and any category pages. I like the Hestia default blog style. I would like a page to display posts of a particular category.

My options (I think);

1. Create a page and add a a blog block which i can limit to a single category
– Can’t see a way to do this to show using the standard Hestia block style

2. Setup a category page (as in link above) which I can then edit. It would be great if I could add a paragraph or two, and an alternative page title and maybe a subscribe option at the bottom of the page.
– as the category page is not an actual page, is there any way it can be edited?
