    So it seems I deleted all blocks and are now unable to add anything but simple text to my posts.
    Is there any solution to get them back or do I have to reinstall WordPress from scratch?

    is it possible that you accidentally changed one of the settings from visual(blocks) to code editor while working on a page or post?
    -or-
    did you delete something in the actual core files of WordPress? (via file manager or FTP)

    Unfortunately not, the block editor are greyed out and I was writing a post and wanted to delete my custom made block, and deleted it but then I noticed all of them were gone!

    The block editor are disabled in both visual and code editor ??

    -try this to see if possibly a plugin or theme conflict:
    install health check plugin which can be used in troubleshooting mode to deactivate all plugins and theme
    might help narrow down the source of the issue

    Wonderful! Thanks! It went back to normal as soon as I activated Health Check!
    But when I deactive Health Check the + sign are gone again, but this time I can insert images in posts.

    And strange enough I only have a few plugins activated, and it worked with them earlier. I will have a look at it.

    I deleted and deactivated some more plugins, it’s working now! A thousand thanks for a quick respond Lisa @contentiskey !
