I had long-term trouble with my WP installations not sending out emails at all.
In the end, the problem was in the way WordPress generates the from address in wp_mail. This plugin helped me to sort it out.

Can’t change name, can’t change email, and throws error for the grayed out email that is actually valid. I expected this to be a functional alternative to “WP Change Default Email”, now I’ll have to modify the WP source.
