How to set up Google Analytics Goal when using plugin

I would like to set up a Google Analytics goal in addition to setting up enhanced eCommerce. I have been using your plugin for tracking eCommerce sales on our eCommerce website for about 6 months and it works great.
Our site has tradition non-eCommerce conversion events (sign-up, view account, etc) and eCommerce. I’m, concerned that since I don’t have a “goal” set up in GA for eCommerce transactions, I don’t see the effect of “enhanced eCommerce” conversions when I view goals completion information in other Google products such as GA, adwords, retargeting, etc. I think it would make sense to track a WooCommerce order as an order under enhanced eCommerce tracking (as our plugin does for us today) and additionally as a goal. It appears that GA views “goals” and “eCommerce” as two different events.
I went through and set up a goal in the GA admin tab looking for page requests that contain “/checkout/order-received/”. Currently I have value field in the goal set to “off”.
Ideally I would also like to pass in the order value that is calculated in your plugin? Is there a way to do that so my goal value functions are consistent?
Are there any concerns with “double counting” orders using this approach?
Any insight your team could provide would be greatly appreciated.
