I don’t think Postie is setting the draft status as at the end of the log you can see
[post_status] => publishThe next thing I’d try would be to turn off all other plugins and switch to a simple theme. Then process an email. I expect that email will publish normally. From there it is a matter of enabling one thing at a time, processing and email and checking the post status. Somewhere along the line it will switch to draft and you have your suspect.
