Graceful Disabling of Google AMP

Hi, I have had this activated for a while on a food/recipe blog (haven’t updated to the version that just came out) but now that Google has extended the AMP version to search results (not just the carousel) I think I need to deactivate AMP. It’s just too basic, the recipes on posts (Easy Recipe Plus) look horrible and the email optin form doesn’t display at all (Bloom) meaning virtually all the mobile traffic referred from Google is non-converting. Just seems like a bad fit for this type of website, and I’m not adept enough to make customizations myself.
My question is, what is the correct way to “gracefully” remove AMP? All my posts are indexed, showing up in Search Console and they appear on mobile Google search results. If I simply deactivate this plugin I assume the mydomain.com/post-title/amp pages will be gone, so is there anything else I need to do to ensure people are not sent to 404 pages, Google doesn’t get upset, etc? What is the correct process to follow? I’ve been having a hard time finding the proper process for doing this.
