How can I isolate the post to a category or home page

Hi,

I have a wordpress site using 2016 theme that I would like to have more control where posts appear.

The blog is about a sailboat journey we’re about to embark on.

Posts that have no category should go to the home page.

Posts that have a category should only go to that category name.

The behavior now is this:
Post goes to both the home page and the category name.

We will be using postie to add content via email during our journey.

Any help would be really appreciated.
