What do you have set for your home page under settings->reading? That is the address for your home page, after all!

but – when I change to anything but “my latest posts” – I get a too many redirect error and the homepage – or any other page – will not load

No. But why would that matter for this particular setting

I suspect that your theme has a front-page.php that defines what the front page is regardless of the setting or there is something in the theme that forces the front page.
