Can you make a portfolio item its own gallery?

Hi,

I want each portfolio item to be its own gallery in order to show different categories of images together, rather than having to create a separate portfolio item for each image and consequently having rather too many portfolio items! Is this possible?

I noticed in the theme demo, when you click on a portfolio item and scroll right/left, you just jump to the next item. If each item were its own gallery would this still happen?
