Different header text on each page, adjust menu position, add secondary menu

Oh WordPress, how do I hate thee.
1) Is there an EASY way – as in doesn’t require spending the next two weeks learning to code – that will SIMPLY let me change the header text on each (static) page to something different?
2) How do you shrink the space between the header text and the (horizontal) menu? i.e. reposition the menu further upward? I’d like the gallery to fill the page.
3) Also would like to add a secondary menu, to be displayed on most of the other pages, replacing the main menu on those pages.
4) I”ll probably keep these white, but is there a way to change the page backgrounds from white to black if need be? I have a WordPress gallery on each page if that matters.
I definitely would like to stay with this theme if possible, it’s got a nice design to it.
I have never, ever hated a program so much in my life as WordPress. Really. Ever. I wish I could fling it from a high cliff and make it go away.
