i see stuff that adds view count and social media sharing, but nothing about adding dates to the title.

What was wrong with the first plugin exactly? I’m not sure which you are trying to use, you can search plugins by “post date” or similar variant to show other results as well.

nothing is wrong with it, it lets you put things in the post, i’d like to do that for the title as well. (Which doesn’t work)

Apart from the having the date posted with the post itself, you may want to read up on this on how to do this via other means if you can’t find a plugin.

if i used that method would it add the date to every old post as well or only new ones?

It should be every existing post and new ones, I’d say try and find out.
