Remove punctuation from between meta items

Hello
I’m using shortcodes to put post queries on my page. But I don’t want to see ‘and’ or ‘&’ on my metadata lists. Any idea how I remove them?
Example:
I want to see this: Cat1 Tag1
Not this: Cat1 & Tag1
I want to see this: Cat1 Tag1
Not this: Cat1 and Tag1
