Attributes and Taxonomy in the Product Data Meta Box

Hello everyone,
I am looking to add some “required” attributes to some products through the Admin interface.
The catch is that I want the attributes to both taxonomies (so they can be filterable) and manageable on the Admin Panel.
I have successfully done the “WooCommerce Custom Product Fields” but my hurdle here was that this appears to be “simple” information on my page. Its not a Category or taxonomy and therefor its not sortable with tools like Product Filter or Magic Grid.
Scenario 1So then I went the other route and used the Woo Product Attributes.
When I enter an attribute called “Age” and give it several terms (puppy, kitten, Young, etc.) This works perfectly fine. The attributes both show in “Additional Information” and Show up in the filter exactly like I want. My only draw back at this point is in the Product Data area. Now the user could select more than one option for “Age.” Also, the user needs to go and add that attribute instead of it already being there like the first scenario.
Scenario 2I guess what I am looking for is a way to have my cake and eat it to.
Is there a way (or a plugin) that can make the attributes section in Woocommerce more “user friendly” like the first scenario?
Any help or direction at this point is tremendously appreciated!!!

There have about 500 shelter animals at 1 time so filtering is very important to us.
