Is it possible to display only one category? & Exclude it from any other pages?

I’m really set on the idea of using WordPress to make a poetry site to keep all of my poems/stories together.

My questions:

Is there a way to display only one category on the index?

Is there a way to exclude a category from the archives and links?

For example, I want the category “news” to display on the index. However, when you look at the list of categories and archives for poems and stories, you will not find anything that is listed in “news.”
