    Booking date/time can be displayed per booking, not per attendee (1 person can make more than one booking if so desired).
    So check out the booking placeholders and shortcodes in the doc:

    we are now using #_BOOKINGS for cruise event instead of #_ATTENDEES.

    configuring the settings “Bookings list” with #_FIELD{xx}, #_BOOKINGCREATIONDATE and #_BOOKINGCREATIONTIME.

    We use your event manager in a yacht club web site. https://myscyc.com/

    Our cruise event is formatted with a Template, that has variables of interest such as BOATNAME defined as #_FIELD{1}.

    Another type of event is a dinner event and we will continue to use #_ATTENDEES to list people attending.

    listing attendees or bookings content will vary by event template.
    there may be a need for multiple types “Booking list”

    If that is needed, just use the shortcode [eme_bookings] with its options inside the single event format. Then you can use a different template there too:
