Where do I add and change the default SEO title for Yoast plugin?

New to wordpress. The field is pre-populated with grayed-out default title.
How do I change this title, so it changes in all post and home page.
I would like to shorten it, so the SEO title does not turn out too long over 70 characters.Thanks.
