Change Post Status

Hi,
I had a question regarding the changing of post status. Before I ask, let me describe my envisioned workflow for a rejected submission using Gravity Forms.
- User is logged into Contributor account
- Contributor then goes to submit a project (using Gravity Form)
- Contributor submits a project and post is put into a “Pending Review” status
- Editor/Admin is notified of submission
- Editor/Admin views submitted post through WordPress Admin
- Editor/Admin notices an issue with submitted project and changes post status to “Draft”, then saves post
- Contributor is notified that project has been rejected (with issues) and receives a link (to Gravity Form) to revise his/her submission
- Contributor clicks link and views submitted project
- Contributor makes revisions to project and updates submission, which puts submitted post back into a “Pending Review” status
- Editor/Admin is notified of submission
- If necessary, cycle repeats…
I have triggers in place that notifies the appropriate users when post are: submitted, disapproved, approved, scheduled and published. I want to keep everyone in the loop as much as possible.
With that said, is there a way to ensure that when the Contributor resubmits his project, the post is put into a “Pending Review” status? It seems like it should be possible. I just don’t know how to do it…

BTW: I have my forms setup to make the submission automatically go into a “Pending Review” status.
