If you’re referring to the links below the videos https://screencast.com/t/R9ZuWd2G7W8B you can change them with adding some custom CSS. Try adding the following CSS code in the style.css file of your child theme or add it in your site using the following plugin:

.artmain .main-entry-title a {
color: #000;
}

This should change the color of the links.

On number two I am not still clear on what you want to happen here. If you want to manage the widgets on your sidebar simply navigate to Dashboard >> Appearance >> Widgets and you will see the widgets currently attached to the theme’s sidebar: https://prntscr.com/5k2xiv
