Form submit to Email *and* Text file

Is there a plugin or script that will enable the following: I want user input from a contact form to be written to a text file on the server and also emailed to me. I have looked at some form plugins — Livecontact and others. They are wonderful contact forms to send email, but I don’t know of a way to add the feature of collecting the data in a text file. Any suggestions?
