Edit "All Event Categories" drop down?

 if ( $taxonomy->name == 'event-categories'){
  $taxonomy_args['show_option_all'] = 'All Cats';
 }
 return $taxonomy_args;
}
add_filter('wpmfc_calendar_taxonomy_args','em_wpfullcalendar_category_label',1,2);

*you can use wordpress taxonomy args

I think Angelo meant for you to use the snippet he gave as a starting point, which you could edit as you need.

Filter snippets like that need to go in the functions.php file of your theme.
