Latest Activity by user selected category

Does anyone know if there is a plugin that will allow you to see selected categories latest activity in dashboard?

Basically I’d like to be able to select a certain category or number of categories to show Latest activity in those selected categories. Ideally im looking for something that individual users could select their own categories to keep dips on.
