turn off unwanted text without editing code?

i’m fairly new to WP and don’t have much skill editing code. is there a way to turn off some of the default blogpost text i don’t want without getting into editing the code? e.g. checkboxes that omit such text lines as “category archives, gallery, posted on…, this gallery contains 3 photos” etc. (this is all in the service simplifying the look of the blog page.)
