Links to pdf

Yes, it is possible to add a link to a pdf (or to any url) from an image box: that is a Premium feature though, not available at the moment in the free version.
In addition, just for your information, the Premium version also has a Document box that would allow you to embed documents (pdf and others) in your Zedity content, usually providing a better user experience.
