Two weeks ago I built a new site for a client using Easyest Gallery and today I had this same issue running 0.1.0-RC-12. I initially started with Lazyest Gallery, then upgraded to Easyest RC 6 and finally all the way up till 12.
The Problem: The wp-content/gallery folder has somehow been deleted thus causing Easyest Gallery to act as if it hasn’t been configured.
The Temporary Fix:I was able to fix the problem by using ftp and recreating the gallery folder and subfolder with images. Sadly, my client had added 40+ photos since my last backup, so those are gone for good.
My Experience: When I first installed Easyest on localhost I tried to create the wp-content/gallery directory from inside the settings menu of the plugin and had a read/write problem. I cannot recall if I was prompt or if I just assume it was a r/w error, but my solution was to manually create the directory, which I did.
From there, I uploaded ~50+ pictures to Easyest. The next day, I went on my localhost site and the photos were gone. Which is odd, so I restored from a backup (Yay for being OCD) and continued developing waiting for it to happen again. It didn’t.
From there, I launched a testbed site to show off to my client and finally the final site. Today my client called me and told me all the photos were missing from the Gallery the day following adding new photos.
I reuploaded everything from my backup (Which didn’t include his uploads from the night before) logged into the dashboard, went through the install producers for Easyest “Settings >> Easyest” and set the directory. Then in Easyest Gallery I found that all of the Gallerys were sent to the trash, so I republished them and all the photos I restored via my backup worked, but I had “Missing Content” text and broken images in my Media Library for all the new photos I didn’t have a back up of.
At that point I decided to make this post, but I did a quick CSS tweak to a button on a page and noticed that all the “Missing Content” tags were gone and any trace of the photos uploaded last night by my client were gone.
TL:DR Version: I think it’s a permissions issue with WordPress. Mainly because of that weird problem I had when I first installed Easyest Gallery and because I manually made the folder it’s trying to create it’s own and overwriting it? *Total speculation*
Also, I currently have the site and Easyest Gallery in three locations: localhost, a preview site on my webhost and the live version at my clients domain. All three of them have had their galleries break since I finished the project. Two of them I am unaware of when they broke (local and the preview site) because I wasn’t monitoring them and the third broke last night a few hour after being updating with new pictures.
So I doubt it’s user error since two were unattended, but that doesn’t mean it’s not admin error and I something on my end with configuring WordPress is off.

On my preview site, I’m going to disable all my plugins and themes, fix the gallery and upload a new picture and see what happens. But I highly doubt another plugin is deleting a folder specific to Easyest Gallery, but you never know.
