[Plugin: MediaElement.js – HTML5 Video & Audio Player] Can I serve multiple encodings?

I’d like to offer my users multiple encodings (quality), like YouTube, so that users with slow connections can stream a small file, while users with fast conections can view a larger file with higher quality. Can this be done?
