What is the “_e()” function ?

Hi,

I am trying to customize a new WP site on my local system before I take it live. I am noticing a lot of <?php _e('various text'); ?>

What are those about ? Is there a reason I sould use that instead of just writing in HTML ?

I searched the Codex but couldn’t find the right page.
