Build self-hosted behind the scene while keeping WordPress.com live?

I currently have a blog on WP.com (vanfoodies.com). I just purchased the WordPress hosting package on GoDaddy.com and installed 3.3.1 using the same domain. I want to keep the current blog running while I build the self-hosted behind the scene. All I did was installing WP.org and that was it. I’m not sure what to do regarding uploading a theme and where to upload the .XML file from the current blog. Is it possible for me to work on the new site behind the scene, re-organize the content and work out all the kinks, before I flip the switch and make the new one go live? Should I have installed WP.org to a different URL? I’m not a web developer so I don’t quite get all these. Thanks in advance for your help!!
