[eShop] What happen to eShop?

This used to be a great plugin, but now I can’t remove fields and can’t add fields and I don’t want drop down menu’s for states and such and I can’t get rid of it.

I need to add a few fields to the address area, people have to answer a few questions, but I can’t find where to do that.
It used to be so simple, now it’s impossible.

How can I remove and add fields? Is that even possible any more?
