Create a hidden page or post

I don’t want certain pages to display on menus, but be able to link to them manually. Example: a privacy policy page that is linked to only from a link in the footer.

The only options I see are to make a post public (and by default that automatically gets attached to a category that displays in the menu), or password protected (which is not appropriate), or private (which defeats the purpose).

Anybody know how to do this without FTPing a PDF or similar?
