How to organize the posts ?

Hi,

How to organize the posts on home page of my blog ?
Every time when I publish the new post it appears on my
first page / home page but sometimes I dont want that…
Sometimes I just want that my new post appears in category page
not first page… is there any plugin for that or how can i do that ?
