How do you move images form one category to another?

Please help!.. My word press is site is for my illustration work. I have four different categories under illustration ( on the homepage ), diff images in each category. I am trying to swap the images around. e.g move an image from personal work to travel.. for instance. I also want to know how to keep the site from being viewed when its undergoing changes? thank you!!
