Is it possible? 2 blogs per site on a WordPress Multisite

Since you can map domains to MultiSite, you SHOULD be able to also map subdomains similarly.

Otto’s tutorial, however, looks like it blocks it to just https://www.domain.com, so that particular plugin would not be right for this.

You CAN point the domain, and subdomains, to specific hosts, so that part I know you can do.

Yep. CNAMES is what you use to map subdomains.

You realize tho, from your example above, that both https://www.site1.com and blog.site1.com are going to the same exact site?

and yes, Donnacha’s domain mapping plguin shoudl let you do that. Only one domain can be the primary of the site though.
