Can you clarify how you are currently creating/collecting your data?

One way to make this more dynamic could be to use the tablepress_table_raw_render_data filter hook (see https://github.com/TablePress/TablePress/blob/3.0.4/classes/class-render.php#L117-L125) and use that to return your custom/dynamic table data (so that it replaces the static/”dummy” data of the table).
