Currently it is not possible to delete the email field.

if I (I.e. my webmaster) enter in the php of the plug-in, could you tell me where is the string to delete email field ?

Sadly its not that simple. There are lot of inner workings that relay on this field value and deleting it will cause problems. Also any code change you make will be lost next time the plugin updates.
