Page displays like a post

Hi,
I’m new to WP(1/5 is what I am using) and although I am finding it a bit more work to learn than, say, blogger, I love it for that! However, I am running into a few questions. Hopefully, someone can help me with this one:

I created a Page: https://charlesredell.com/?page_id=3
and although in the Codex where Pages are described it says specifically “Pages cannot be associated with Categories” and yet, that page’s single “post” is linked to the unclassified category and I can not figure out how to turn that off.
Can someone help me with that please?
And while we’re at it, is it possible to turn off the “posted by Charlie on [date]” line for Pages but NOT for posts?
