Post seems to have category applied but doesn’t show it in dashboard

I’m working on troubleshooting a site where multiple posts seem to have categories applied but don’t show them in the dashboard (confusing, I know). The Posts>Categories page on the dashboard shows 3 posts with this category.
When I view Posts (Posts>All Posts) and filter by that same category, I show the expected 3 results. But only two of them actually show the category in the table. The third just shows the “empty”/”not applicable” extended length hyphen.
If I quick-edit the post that’s semi-categorized, it doesn’t show the category there either.
This seems to periodically happen as well, not a one-time thing and not just upon creation. I’m not the one who manages these posts, but I believe some posts have had the categories “disappear” multiple times.
The site is using Elementor and several other plugins, but I’m leaning toward that not being relevant because this seems to be displaying on the Categories, Posts, and quick-edit screens which seem like they’re all built-in core functionalities.
I’d appreciate if you have any suggestions on where I might look next or what I might try to narrow down what’s going here.
